Sustainable farming with carefully managed soil or naturally grass cover and machine weeding rows. Zero herbicide. HVE4 certification.
We aim to protect the biodiversity and use very little inputs.
Hand-picked harvest on chosen parcel at optimal maturity and in the early morning; hand sorted and grapes de-stemmed.
Alcoholic fermentation in small vats, manual punching down of the cap, gentle vatting for 3-week-long.
Racking and draining by gravity. Malolactic fermentation in vats.
Ageing for 12 months in 300L Italian amphora, and in French 160L.
Natural micro-oxygenation of the wine due to the amphora ageing.
Estate bottled
